In 2009 there were only 400ha of Pinot d'Aunis in France - it's a rare grape variety from a tiny appellation providing a nice alternative to very fine Pinot Noir. The soil is limestone and clay. The juice macerates for 15 days in tank with no malolactic fermentation before aging in tank on the fine lees for 3-4 months.
